Why we stock it

Fermented molasses, copper pot still, then over two years in ex-Australian whisky barrels in the Devils Wilderness where the temperature does what it likes.

We stock it because Australian rum is thin on the ground and this one has genuine character rather than added sweetness. It drinks like a whisky drinker's rum.

Delivery Sydney metro. Same-day dispatch on orders placed before 2pm.

Karu's rum, matured in casks that had held other things first — which is what Outcask refers to, and why each batch differs from the last.

Smoky oak and burnt caramel on the nose over an unmistakable molasses base. The palate is mouth-coating: dark liquorice, caramel and orchard fruit, finishing warm with aniseed and oak. A sipping rum rather than a mixing one, and a good demonstration that Australian rum is not all Queensland cane spirit.

We stock it because a range that carries only obscure bottles is making a point rather than serving customers, and because plenty of people know exactly what they want.
