Fresh Northern Rivers cane juice, fermented with wild yeast and distilled unaged, so what reaches the glass is the cane and the paddock rather than the barrel.

We stock it because it tastes like the place it is from, which is the whole argument for buying local spirits rather than the label on the front.

Made at Tintenbar in the NSW Northern Rivers from fresh first-press juice of sugar cane grown in the Wollumbin caldera — not molasses. Fermented, rested, then twice distilled in a copper pot still. Cane-juice spirit is the rhum agricole tradition rather than the Caribbean molasses one, and almost nobody in Australia does it.

Unaged and grassy, with the raw cane still clearly present: dry and sharp up front, then cereal, liquorice and a woody, faintly herbal finish. It makes a ti' punch or a daiquiri taste like something entirely different from the same drink built on a standard white rum.
