Made by Casa Cuervo in Jalisco from 100% Weber blue agave. The name marks 1800, the year the producer dates the first aging of tequila in oak, and the squat trapezoidal bottle is meant to echo a Mayan pyramid.

Unaged, so what you taste is the agave itself — clean, peppery and faintly herbal, with citrus through the finish. The house benchmark for a margarita, and good enough to drink over ice with a wedge of lime.
