Why we stock it

Karu distil this in Richmond, about an hour up the Hawkesbury from where our van goes, using oranges and pomegranate grown in the same valley. Daintree vanilla and Australian almond give it a semi-sweet weight that most contemporary gins do not have.

We stock it because it is the local distillery we would back over an imported name at the same price, and because you can taste where it comes from.

Karu's flagship gin, distilled in the Blue Mountains west of Sydney by Nick and Ally Ayres, who started the distillery in 2018 and rebuilt it after the Christmas bushfires came through a year later. The botanical bill runs to Macedonian juniper, Hawkesbury pomegranate and Daintree vanilla — a genuinely Australian sourcing list rather than a London recipe with a native garnish.

Zesty citrus first, then warming spice, with pomegranate and orange through the middle and the vanilla arriving late as sweetness rather than sugar. Dry, balanced and smooth enough to drink neat, though it makes an unusually good martini.
