Why we stock it

Lark restarted Tasmanian whisky essentially single-handedly, and the Classic Cask is the bottle that established what the island's malt tastes like - rich, slightly sweet, with the peat used sparingly.

We stock it because Australian whisky has a short history and Lark wrote most of it.

Lark restarted whisky distilling in Tasmania in 1992, after a 153-year ban had kept the island out of the trade entirely. Classic Cask is the distillery's signature release, matured in small Australian oak casks previously used for fortified wine.

Small casks mean more contact with wood and faster maturation: expect honey, malt, orchard fruit and a spiced, slightly resinous oak character. A good introduction to Tasmanian single malt and to what Australian whisky actually tastes like.
