Dom Perignon is made only in years Moet & Chandon declares a vintage, and never blended across them. Each release spends years on lees in the cellars at Hautvillers before it is disgorged, which is where its texture comes from.

Precise and tightly wound on opening, then broader with air — white stone fruit, almond and a distinct toasted note, with a long, mineral finish. Serve cool rather than freezing, in a white wine glass, and give it ten minutes.
